Flourless Chocolate Chip Cookies

For the most part we try to eat healthy, but we all have times where we crave the “old favorites”.  I love chocolate and I have a bit of a sweet tooth so I am always on a quest to make those “old favorites” a little healthier and little more guiltless to eat.  This recipe cuts out the flour, ramps up the protein and cuts back on the sugar.  I can also say that I think we even like these cookies more than traditional chocolate chip cookies.  Give them a try and let me know what you think.  If you find a way to substitute the cane sugar with honey, stevia or pureed fruit, let me know I would love to hear it.  Oh and of course, these go great with a glass of milk!


  • 1 cup of Almond Butter or Peanut Butter (Remember only one to two ingredients should be in whatever brand you buy. Nuts and maybe salt.)
  • 1/2 cup sugar
  • 2 large eggs
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon cinnamon (optional: We add cinnamon for it antioxidant properties and the potential that it helps control blood sugar levels.)
  • 1 teaspoon of vanilla extract
  • 1/2 cup dark chocolate chips or semi-sweet
  • 1/2 cup chopped almonds or rolled oats (depending on the texture you prefer)

  1. Preheat oven to 350 degrees.
  2. In a large bowl mix together: almond butter, sugar, eggs, baking soda, salt, cinnamon, vanilla extract
  3. Stir in chocolate chips, chopped almonds or oats
  4. Roll about 1 heaping Tbsp each
  5. Bake for 12 to 14 minutes.
