Mexican Lasagna

Who doesn’t like lasagna? Or Mexican food? This Mexican lasagna recipe is a great meal that can be made by layering the ingredients and cooking in the oven. It’s simple, tasty and pretty good for you too. We like to make things that will give us some meals for a couple of days, so the last time we made this, we thought there would be enough for a few more meals, but it quickly disappeared. Make this one soon and you’re sure to love it!

Ingredients

  • 1 pound lean ground beef
  • 1 large onion chopped
  • 2 cloves garlic chopped
  • 1 tbs chili powder
  • 1 tsp cumin
  • 1 tsp sea salt
  • 2 cups of salsa
  • 6 tortillas (Use corn tortillas for a gluten-free version)
  • 1 can of black beans, drained and rinsed
  • 1 cup of thawed frozen corn
  • 1 8oz. package of shredded Mexican or cheddar cheese
Directions

  1. Put everything in blender except Spinach and blend.
  2. Add spinach a few leaves at a time after everything is blended so it won’t get stopped up.
