Berry, Feta and Spinach Salad with Steak Medallions

Ingredients:

  • 1/2 cup blueberries
  • 1/2 cup strawberries quartered
  • 1/4 lb venison steak or beef steak medallions
  • 1/4 cup crumbled feta
  • 1/4 cup chopped or slivered almonds
  • 1/4 cup sliced green onions
  • 1 cup spinach whole or chopped
  • Homemade raspberry vinaigrette (click here for dressing recipe)

Directions:

  1. Prep all ingredients according to ingredient list. Sear steak medallion on both sides.
  2. Place spinach on the bottom of your dish. Sprinkle ingredients on spinach and top with steak medallions.
  3. Drizzle raspberry vinaigrette over the top and serve.
