Kale Frittata w/ Sun Dried Tomatoes

Ingredients

  • 10 Eggs
  • 1 bunch of Kale, Chopped (de-stem if you like)
  • 1 cup Sundried Tomatoes
  • 1 Red Onion, Chopped
  • 3 Cloves Garlic, Minced
  • 1/3 cup raw milk
  • 1 tsp. Salt
  • 1/2 tsp. Pepper
  • Butter or Coconut Oil to grease pan
Directions

  • Preheat oven to 400 degrees
  • Steam or blanch Kale, draining any liquid left over
  • Whisk together 10 eggs w/ milk, salt and pepper
  • Grease pan with butter & heat to medium
  • Saut√© onion & garlic for 1-2 mins over medium heat
  • Add sundried tomatoes to pan, positioning evenly over onions and garlic (like pepperonis in a pizza)
  • Squeeze kale to remove excess water then spread evenly in pan
  • Pour egg mixture over everything evenly
  • Cook on stove for approximately 5 mins until eggs just begin to cook
  • Bake at 400 deg. for 10 mins or until eggs are done to your preference.
