Roasted Red Pepper Hummus

Hummus is only hummus when it is made with chickpeas and chickpeas are among the most eaten foods on the planet. Almost every major culture has a recipe that calls for this bean. Adding roasted red pepper and other spices punches up this traditional food for any occasion

Ingredients

  • 2 1/2 cups of dried chickpeas soaked and simmered or 3 – 14 oz cans of chickpeas drained and rinsed, retain liquid
  • 12oz. jar of roasted red peppers in olive oil
  • 3 cloves garlic
  • 1/4 cup lemon juice
  • 1/2 cup tahini
  • 1 1/2 tsp sea salt
  • 1 tsp red pepper
  • 1/2 cup olive oil
  • 1 1/2 tbs cumin
Directions

  • Drain and rinse prepared beans. Reserve the liquid from the pot or can.
  • Place all ingredients in a food processor blend until smooth and reserved liquid until you achieve desired consistency.
