To-Go Egg Cups

If you’re trying to eat healthier, it usually means eating more eggs, garlic & spinach for breakfast and it’s not always realistic to fire up the stove in the morning and do some cooking. These baked To-Go Egg Cups are packed with healthy ingredients and you can store them in the fridge for when you need to grab something and hit the road.



  • 1 lbs browned ground beef
  • 1/2 chopped onion
  • 2 cloves chopped garlic
  • 2 tbs Italian seasoning
  • 1 tsp sea salt
  • 1 dozen eggs
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1 tsp sea salt
  • 1 bag of thawed frozen spinach

  • Preheat oven to 350 degree.
  • Saut√© onion and garlic. Add ground beef and brown. Season with 1tsp. salt and 2 tbs Italian seasoning
  • Beat one dozen eggs, salt and pepper in a mixing bowl. Add all other ingredients and stir.
  • Fill silicone muffin tins with mixture. Bake at 350 degrees for 35 minutes or until solid.
  • Allow to cool remove from pans. Store in refrigerator or freezer. Reheated for a quick healthy breakfast on-the-go.
