Gluten Free Chocolate Coconut Bread

chocolatebread2One evening I was attempting to come up with a new brownie recipe with the kids. In my attempt to keep the sugary ingredients to a minimum I inadvertently created something that was less brownie and more bread. At first it was a little disappointing that it didn’t turn out as I had expected, but as the evening went on, I found myself munching on it and it really grew on me, not as a dessert, but as a bread. In the end, this bread was gone very quickly that evening and only one piece remained the next morning.



  1. Preheat oven to 350F
  2. Mix all ingredients thoroughly in bowl
  3. Pour onto pie pan or bread pan, then refrigerate for at least 20 mins
  4. Bake for 25 Minutes or until toothpick comes out clean
  5. Allow to cool before serving
