Whether you are trying to save money, reduce calories, avoid gluten, or include more vegetables in your diet.  This solution answers them all.

Buy a head of romaine lettuce or any type of green that is nice and sturdy. Load it up with the filling of your choice, just like you would a tortilla.  Use this lettuce wrap in place of tortilla or shell in a taco or fajita.  Fill it with hummus, refried beans, egg, tuna, chicken salad and more!

Ingredients

  • 1 Head of Romaine Lettuce
  • 4 – 6 Deer Steak Medallions (Of course, beef or chicken work too.)
  • 1 Red Bell Pepper, sliced into spears
  • 1 Yellow Bell Pepper, sliced into spears
  • 1 medium/large Onion, sliced into large pieces
  • 1 clove Fresh Garlic, chopped
  • 1-2 Tbs. Taco Seasoning
  • Salt and Pepper to Taste

Directions

  1. In a skillet over medium heat, cook meat to desired doneness
  2. Add Veggies to skillet and allow to heat up and cook
  3. Turn off heat and season with salt and pepper
  4. Pull the full Romaine leaves off the head and place with curved side facing up (like a bowl)
  5. Fill with Meat and Veggies

As a side note, the photo for this recipe was taken by Cora (age 4)! She has really taken to helping with photography and is quite skilled at it for her age. She knows how to take the camera, hold it, get the shot framed up, focused and release the shutter…Very talented indeed (say her proud parents)
