Egg Drop Soup

Ingredients:

  • 2 quarts bone, chicken or vegetable broth
  • 4-6 cloves garlic, chopped or minced
  • 1 yellow onion, chopped
  • 1 inch sized ginger, chopped and peeled
  • 6 eggs, stirred
  • 2 cups fresh greens, chopped (We used turnips greens from our garden)
  • grapeseed oil or butter
  • salt and pepper to taste

Directions:

  1. Sauteé garlic, onion, ginger for 5 minutes in oil or butter
  2. Add broth and bring to boil, then turn down to a simmer
  3. Slowly pour in eggs while you whisk
  4. Add greens and allow to wilt
  5. Add salt and pepper to taste
  6. Serve
